Meatless Friday



With an 8:00 am bible study this morning I needed a quick and easy breakfast to start my day!

On the Go Oats

Ingredients

1/2 cup of Oatmeal

1/2 cup of Milk

cinnamon

1/2 banana

Optional: brown sugar


Step One: combine milk, oatmeal, and cinnamon to taste in a small bowl. Microwave for 90 seconds

Step Two: while the oatmeal is cooking, slice half a banana

Step Three: add the banana (and some brown sugar if you want something sweater) to the cooked oatmeal


*Note: I put my oatmeal in a to go coffee cup to make it easy to eat in class, on the way to work, etc. (DO NOT MICROWAVE YOUR OATMEAL IN THE COFFEE CUP, it will be a mess!)


Lunch

Tuna Toastie

Ingredients

2 pieces of honey wheat bread

1/2-1 can of tuna *in water

1-2 tablespoons of mayonnaise

Shredded cheese to taste

Optional: salt and pepper

1/2 banana from this morning


Step One: toast bread in the toaster until golden brown

Step Two: while bread is toasting, combine 1/2 to 1 can of tuna with 1 - 2 tablespoons of mayonnaise, salt and pepper to taste *I had half a can of tuna in my fridge so I used that, after this recipe you will need 4 can of tuna for the rest of month so feel free to use to whole can!

Step Three: put tuna mixture on one piece of toasted bread, top with a thin layer of shredded cheese (I used Mexican mix) and top with the other piece of bread.

Step Four: Pair with 1/2 of the banana from this morning and a large glass of water.


Dinner

Fancy Veggies

Ingredients

1/2 of butternut squash *left over from *left over from "Fall in Love with Breakfast"

4 tablespoons of roasted red pepper humus

1 bell pepper top

Optional: butter, salt, pepper


Step One: heat squash in the microwave for 3-7 minutes or until heated all the way through.

Step Two: while the squash is in the microwave cut the top off of a bell pepper. Remove the seeds in the middle and cut around the stem, using the indention of the pepper as a guide to cut small oval shaped pieces of pepper as seen in the picture.

Step Three: place peppers and humus on a plate

Step Four: scoop the squash out of its shell with a spoon, adding it to the plate with the humus and peppers. Add butter and pepper as desired and enjoy with a large glass of water.
