Fall in Love with Breakfast

This easy and filling breakfast just screams fall!



Ingredients

One whole butternut squash

Two eggs

Two slices of baked honey ham

Nonstick cooking spray

optional: Butter, salt and pepper

Step One: poke holes in the butternut squash for ventilation while cooking. Place whole squash in the microwave for 10-20 minutes depending on the squash size (10 small, 20 large)

While the squash is cooking begin your morning routine: jump in the shower, make your bed, do your hair, etc.

Step Two: cut the squash in half lengthwise and scoop out the "guts" (seeds) using a spoon (you will know the squash is done when you can easily cut it in half without any resistance) Scoop 1/4-1/2 of the squash out of its skin onto your plate, add a pad of butter to melt in the middle (if you want).

Save the rest of the squash we will use it in later meals!

Step Three: while the squash is cooling, grease a medium sized skillet with the nonstick cooking spray. Crack two eggs into the skillet and add ham to the side. Cook covered on low-medium heat until the whites of the eggs are completely cooked, about 3-7 minutes.

While the eggs and ham are cooking, continue your morning routine *set a timer so your eggs don't burn*

Step Four: arrange eggs, ham, and butternut squash on a plate, salt and pepper to taste and enjoy with your favorite breakfast beverage (coffee, teat, juice mimosa, we don't judge!)

Lunch

Hummus and Red Bell Pepper

Ingredients:

1 Red bell pepper *or any other color of course!

As much humus as you need for your pepper


Step One: cut one red bell pepper into slices

Step Two: use the pepper slices as crackers to dip in your hummus!


Dinner (or is it supper?)

Classic Hot Ham and Cheese

Ingredients:

2 slices of honey wheat bread

3 pieces of cooked honey ham

1 American cheese single

1/4 butternut squash

optional: butter, salt, pepper


Step one: scoop 1/4 of squash of out shell, add butter if desired and heat for 1-2 minutes in the microwave

Step two: while the squash is in the microwave, assemble a ham and cheese sandwich. When squash is done, microwave sandwich for 30 seconds.

Step Three: salt and pepper squash to taste and ENJOY!
